We're peeling back the layers—literally. Scallion pancakes aren’t just a side dish—they’re a whole universe. Thick and chewy, thin and crispy, rolled, folded, twisted… every version tells a different story from somewhere in China or the Chinese diaspora. At this event, we dug into that delicious history with pancakes made by home cooks (featuring recipes from Frankie Gaw and Hetty McKinnon) alongside offerings from 886, Shanghai Time, The Tang, and Vanessa’s Dumpling House.

After the tasting, Sarah sat down with chef Isabel Lee of Forsyth Fire Escape—home of New York City's most iconic scallion-pancake burritos—for a live interview and Q&A.
